WHEAT QUICHE 9 inch single pie crust, part whole wheat flour is best Precook pie crust at 450 degrees for about 5 minutes. Saute vegetables in butter untill tender. In a mixing bowl, stir together the beaten eggs, cream, milk, salt and dried basil. Stir in the cooked vegetables and cheese. Sprinkle cooked wheat berries in bottom of pastry shell. Pour in egg mixture. Bake at 375 degrees for 30 minutes or until knife inserted comes out clean. Cool on wire rack 5 minutes before serving. Yields: (6) servings. |
WHEAT -N- NUT PILAF 1 cup pre-soaked wheat berries In large ovenproof skillet or flameproof casserole dish, sauté wheat berries in butter about 5 minutes or until lightly brown; stirring occasionally. Stir in broth, carrots, and salt, bring to boil. Cover and bake in 350 degree oven for 25 minutes or until broth is absorbed stirring occasionally. Stir in choice of nuts. Yields: (4) servings. |
CRACKED WHEAT-GROUND BEEF CASSEROLE Pour 1 cup boiling water over 1 cup cracked wheat. Set aside. 1 lb lean ground beef Brown ground beef, add celery, onion, green pepper, garlic, salt & pepper, cooking until onion is transparent. Drain fat. Stir in the undrained tomatoes, cracked wheat, raisins and seeds. Bake covered in a 2 qt. casserole at 375 degree oven for 30 minutes. Uncover, top with cheese, and bake 5 more minutes. |
WHEAT MEAT LOAF 1 cup cooked cracked or whole wheat kernels Glaze: 1/2 cup catsup Combine loaf ingredients, mix well. Turn into 8 x 9 inch pan, shape and spread glaze over top. Bake at 325 degree oven for 1 hour. Makes (8 -10) servings. |
